I still can't believe I'm a blogger.  I can't even say it with a straight face... but I'm proud to be one. It's almost 24 months since my first post on Mother's Day of 2009, so I consider every mum's day my blog anniversary as well.

Active Ambassadors Academy: Holistic Preschool Education

During a visit to Active Ambassadors Academy (AAA) earlier this month, some mom bloggers and I got to meet the wonderful and dedicated people behind this new educational institution located in New Manila.  We were introduced to the school's unique programs that cater to preschoolers aged 2.6 - 5.5 years old within a small class size.  For parents who are currently scouting for a preschool for your little ones, I'd like to share what impressed me most about AAA and hopefully enlighten you on what to look for in a preschool.

Easter Egg Painting and Hunting

HAPPY EASTER Sunday!

We really did not plan anything for Easter and so after having a lazy Sunday morning and ate spaghetti bolognese for lunch, I boiled some eggs and set an art day with the kids.

I took out some colored markers, paint brushes and watercolor paint and the kids made their own Easter egg creations.

...the boy's 'earth, water, and fire' theme (oops, I think I placed this upside-down when he clearly specified that the 'fire' should be at the bottom!)

...and my attempt at my favorite paisley prints (fail! LOL!).

Then we played a few rounds of egg hunting around the reading area...and they wanted more! I didn't expect they would enjoy this pretty simple game of ours! We should be doing this again :)

Of course they "found" 2 eggs each for every round, and proudly lined them up here...

Psalm 91 - A Powerful Prayer for Protection

To everyone traveling this Holy Week, let me offer you this bible scripture for your safety and protection -- PSALM 91.

I began praying this, and even keep a tiny piece of print-out in my purse, after learning about it's meaning and powerful words while I was still a single working girl. Since then, I've always prayed Psalm 91 whenever I travel, and also pray for family members' safety.  After praying this, I am confident that God will keep me and my loved ones protected from any harm or danger.

In these troubled times, with all the recent global disasters like earthquakes, tsunamis, floods, global warming, among many others, I think we all need to pray and seek God's deliverance.

Craving for California Crunch Cassava Chips

That's a tongue-twister for a title don't you think so? And it's true, I've been craving for crunchy cassava chips after sampling a bag recently.


I've had cravings for different types of chips in the past -- there was a phase of munching pork rind cracklings, popcorn, caramelized banana chips, camote (sweet potato) chips, and now this --  California Crunch Cassava Chips, in Sour Cream & Onions and Barbecue flavors!

I was quite excited to try the chips as soon as I received the sample bags a few weeks ago. I'm quite adventurous with food and I enjoy trying out something new and different.

My little girl happened to be there when I got the package and she wanted in on the action too! So we both munched on our first cassava chip together.  We have no expectations about cassava chips.  It looked and felt like ridged potato chips, but it's more firm to the bite, and has a nice solid crunch to it as compared to the light and crispy regular potato chips.  It was surprisingly very good!

The red bag was Barbecue -- with a sweet-spicy taste.  My girl liked the initial sweetness but eventually tasted the spicy flavor after a few bites and left the bag. It was quite addicting for me since the flavor gets more intense as I ate more. And I like the level of heat too.

Now we move on to the green bag. I offered to open it for her 'coz I knew she will like it more. Sour cream & onion, with it's salty-sweet and tangy taste, is one of her favorite potato chip flavors.  This one was an instant hit for both of us. We found ourselves licking our fingers after gobbling up a few chips.  Too bad she refused to be photographed enjoying her bag of California Crunch. Instead, she gave me her bowl up there to photograph with the sample chips.


What's good to know about cassava chips:
  • Cassava has twice the fibre and more potassium than potato
  • California Crunch Cassava Chips has 30% less fat than potato chips

I do love the taste, and truly enjoy the crunch! After the samples ran out, I found myself buying some at the supermarket!  It's a tasty and healthier alternative to the usual chips and crackers. And it's more filling too!

TOMATIS Method: Not Only for ADHD, Speech Delay and SPD

Having the ability to hear does not mean you can listen.  Listening is voluntary.  When you can listen, you can learn better.
  • Fidgety
  • Lacks focus
  • Easily distracted
  • Sensitive to certain sounds
  • Frequent need for repetition
  • Clumsy and uncoordinated
  • Seeks certain tactile sensations
These adjectives may well describe any active child, or adult. Among other things, these words apply to my personable young boy.  If you see him, you'd say he's just like any typical active growing boy, BUT with some quirks that you just can't seem to point your finger at.

After consulting with developmental pediatricians, doing my own research online and reading up on several books, we have come to the conclusion that these behavioral manifestations are consistent with having Sensory Processing Disorder (SPD). Aside from the above checklist, he also experienced difficulty organizing sensory inputs around him, sort of having "sensory overload".  Since he can't filter through these stimuli, it causes him to lack focus, shut-out certain sounds and verbal instructions, or he just gets too excited at times. As a result, these caused so much stress and challenges in the classroom. Often, when you're talking to him, you'd literally feel like you're talking to a wall!

So where does Tomatis come into the picture?

While I was doing research about SPD and appropriate intervention programs, I came across Alfred Tomatis, Mozart music, and auditory integration and stimulation.  I knew a listening program like Tomatis would help with my son's challenges and so I read up about the methods further and was thoroughly impressed.  But at that time, Tomatis was not yet offered here.

What is Tomatis?
Tomatis Method is an auditory stimulation program that is non-invasive, drug-free and involves no tutoring or teaching.  It was developed by Dr. Alfred Tomatis, a French ear-nose-throat specialist, who discovered that listening problems are the root cause of many learning disabilities.  The Tomatis program was designed to "re-awaken" the ear's natural ability to listen and stimulate the brain's desire to communicate.
Guiding principle: “Good learners are good listeners". 

Good learners... 
  • Have discriminating ears that can easily distinguish between the various frequencies that make up speech
  • Are right ear dominant -- many poor learners are left ear dominant
  • Can zoom-in on sounds that are important, and filter out irrelevant information -- many poor learners, especially those that are hyperactive, can not easily filter out irrelevant information.
  • Have ears that capture finer frequencies of the spectrum

Fast forward to 2010.  We were given the opportunity to try the Tomatis Method for my son and I want to share our experience here. I don't want to go into further detail about the method and the program since everything you need to know about it is here at Tomatis Philippines's official website.

My boy was already starting first grade when we began the basic program with Tomatis. Going to "big school" requires him to adapt to a completely different environment and rules. Listening attentively and keeping still have been a main issue for him. So I thought he'd need all the support he could get to cope with the challenges in school life.

His condition was not very bad to begin with, so expectations were set to a minimum.  For me, that's a good sign since we already "invested"years of occupational therapy (OT) for early intervention.  Tomatis would prove to be a great complimentary program to his OT and we welcome any form of improvement.


The 2-hour listening therapy was a form of relaxation and "down time" for him.
At first, he didn't like the long hours but as soon as we get to the center, he was more than willing to put on the headphones and listen to the classical music by Mozart and Gregorian Chants, which he really enjoys and appreciates.

During each session, he engages in floor activities and drawing, and plays with manipulative toys. At times he will be with one or two other children. Kids are even encouraged to take naps! The center is intended as a "no stress zone", even for the moms who accompany the child.

At the end of the whole program, the results came with a fairly good percentage of improvement with test results showing that my boy's listening more with his right ear!

Other positive observations:
  • Better, uninterrupted sleep patterns -- which can also be expected when one goes through the program
  • Better eye-contact when responding
  • Less sensitive to certain sounds
  • Less repetition when calling his attention
  • Can focus better even with some distractions
  • Can calm himself faster after an exciting activity
After my last meeting and interview, I had the chance to meet with all the ladies behind Tomatis Philippines.  I was satisfied with how the program helped my son and I thought I'd share my experience with other moms as well.  So a few weeks ago, with my fellow mom bloggers, we were warmly welcomed by these hardworking and dedicated moms from Tomatis Phils. who gave us a chance to visit their center and to learn more about this amazing listening program.


Tomatis Philippines is the first with centers in the whole of Asia and these ladies are all certified to conduct listening assessments on children and adults under the Tomatis Method.  Meet the women behind Tomatis Philippines:  Ria Vecin, Joanne Pedrosa, and Gem Mañosa.

The beauty about the Tomatis Method is that there are also standard programs for pregnant women, school kids and elderly people.  The 30-hour programs are:
Brain Gain - for school kids with no diagnosed disorders but need to improve on their listening skills and focus
Bellies and Babies - for pregnant women, this program produces an alert, relaxed and physically toned baby as well as calming the mother for ease of delivery
Nifty After 50 - for senior citizens who need increased energy and vitality, improved attention, concentration, and memory

Freezines: Turista, Baking Press & Northern Living

I have to admit, I don't really take time to sit down and read newspapers and magazines anymore especially when almost everything I need is right at my fingertips. With just a click of a button, information comes streaming down our monitors -- for free!


What got me reading print these days, aside from children's story books, are these free mags, a.k.a. "freezines" I've received from the mail recently.  Published by Hinge Inquirer Publications (HIP), Turista, Northern Living and Baking Press definitely fit my domesticated yet busy lifestyle.


Their March issues were so timely because I was really on the look-out for summer destinations and current happenings around the city where I can bring the kids, discover new dishes, and hip spots to check out.

We've already made plans to a nearby destination, and so I'm looking forward to traveling around our islands in the coming summers with their 10 Must-See Places in the Philippines. I've already got my sights on Misibis Bay in Albay, El Nido in Palawan, tour of Bohol, and an escape to Fundacion Pacita in Batanes!

Foodie Friday: Instant Kung Pao Chicken Pasta

Care for some spicy spaghetti?  Go Kung Pao!!!
I'm not going to pretend this is something new. Kung Pao (which translates to palace guardian/official) is a famous spicy Asian sauce and is definitely one my favorite pasta sauces ever since I had a taste of California Pizza Kitchen's Kung Pao Spaghetti, with shrimps, more than 10 years ago. Then came the equally delicious Charlie Chan Pasta from Yellow Cab, a popular local pizza chain.

What I love about kung pao sauce is it's very distinct Szechuan-style sweet-hot-salty flavor with red chilies, complemented with roasted peanuts and colorful mix of veggies for my pasta.

And now I discovered this ready-to-use pasta sauce at one of my weekly trips to the supermarket -- Clara Olé!  Simply toss with your favorite pasta noodles, meat, shrimps or tofu and you're ready to go!


INSTANT KUNG PAO CHICKEN PASTA

Cooked spaghetti noodles (good for 2 - 3 servings)
Sauce:
3 pcs. chicken thigh fillet (or breast fillet), cubed and lightly salted
2 cloves garlic, minced
1/2 red bell pepper, finely chopped (approx. 1 tablespoon)
1 stalk medium celery, chopped
2 tablespoons whole roasted peanuts
Few stems of spring onion, chopped to matchstick size
3 tablespoons peanut oil / canola oil
1 pack Clara Ole Kung Pao Pasta Sauce
black pepper
chili flakes, optional
chili oil, optional


To cook:
Cook spaghetti as instructed on the pack.
Heat a pan with the oil, then saute and lightly toast minced garlic.
Add in chicken cubes and stir-fry for around 15 minutes until browned.
Mix in the bell pepper, celery, spring onions, and peanuts.  Continue to stir-fry until chicken is done.
Pour in the kung pao sauce and mix well. Add ground pepper.

Taste and add chili flakes and chili oil if you prefer more heat.
Gradually toss in cooked spaghetti until well coated.

Serve and garnish with more spring onions and peanuts if desired.


I ate this for two straight days! :)))

What I like about this instant kung pao sauce is it's rich, balanced flavor, yet it's not too hot, which was just perfect for me. This way, you can easily control the heat to your liking by adding more chilies or chili oil. You can actually see bits of chillies and taste a subtle nutty taste to the sauce.

Next time, instead of chicken, I'll use juicy, succulent shrimps!
