Grilled Keta Salmon (Yakisake)

Salmon has never been a staple fish in our household. It's more pricey than other fish in the market and has a very distinct flavor that I believe is an acquired taste. Somehow, salmon intimidates me, that's why I rarely cook with it.  I personally enjoy salmon dishes from restaurants, and buy smoked salmon as canape from time to time. Recently, I received a batch of frozen wild-caught Alaskan salmon to try. This is a new line from Seaking brand. I regularly buy Seaking's marinated bangus belly so I welcomed these new salmon packs and got excited to come up with something in the kitchen.

Foodie Friday: Titas Brunch at Toast Manila

First Friday of the month: Dining / Restaurant

I'm not a morning person. It's so difficult for me to get up earlier than 6 am (unless we need to travel). That is why I like brunch time better than an early breakfast, kasi hindi na ako antok and I can take my sweet time to savor my meal compared to a few rushed bites while I prepare breakfast and baon for the kids and bring them to school. I enjoy this mid-morning meal when I'm alone or have a casual brunch date with friends. The most recent was with fellow titas hosted by Toast Manila in San Juan.

I can't say I love to cook, tamad kasi ako, but I'm quite comfortable working in the kitchen -- baking or cooking something simple for myself and the family. I avoid complicated dishes too, as you may have noticed in my food and recipe posts. Foodie Friday: 8 Meatless Recipes for Lent

First Friday of the month:  Mom-Cook / Recipes

It was Ash Wednesday the other day, the first day of Lent.  I attended the mass held at the girl's school and was reminded of the meaning of this holy season. The priest said that Lent is about alms giving, prayer, and sacrifice.  Two forms of sacrifice that Christians practice are abstinence and fasting.  It doesn't have to be just about food.  We can all choose to abstain or fast from wanting and doing things that we like, or giving up something for someone in need. For this post, it's about abstaining from eating meat.

Honestly, it's hard for me to give up meat, or a meal, more so to fast. But I'm willing and able to abstain for eating meat every Friday.  If you can abstain for 40 days, why not?

I have here 8 recipes from the past year, prepared with no meat, just to give you some ideas on what to include in your menus this Lenten season. Of course, you can cook these anytime of the year. Maybe some of you have already seen or read these food posts, or maybe tried them already.  Thank you for that!

Foodie Friday: Smoked Salmon on Toast (Hors d'oeuvre)

I can't believe I'm writing my last Foodie Friday post for 2013!!!  I still have a few more food posts lined up for you, so I'll try to share them here before we end the year.  Since I still can't beat my number one blog post - the No-bake Blueberry Cheesecake, which I shared after Christmas of 2010, I've decided to keep it more simple this time.  Using cream cheese and smoked salmon, I think this simple hors d'oeuvre is festive enough and still a wonderful dish to serve at your holiday parties and other special occasions.



Backstory:
About 2 months ago, I bought a pack of this smoked salmon from the neighborhood grocery because the girl was curious how salmon tastes like.  We don't normally eat dishes with salmon so I never buy fresh salmon or frozen fillets, except on a occasions when I feel like cooking something "fancy", like this creamy salmon caviar pasta.  I did not complete the ingredients for her tasting dish, so this pack of smoked salmon stayed in the freezer until 4 weeks ago, when I bought a baguette.

I told the girl she can finally try this "colored fish" she was curious about with her favorite toasted baguette with cream cheese.  It was one of those nights when I was too lazy to cook an additional ulam, and decided I'd just eat this appetizer as my dinner.  J did too (since he's on a "diet")!

The verdict: she did not like it, hihihihi! But still, I was proud of my no-cook meal.  I immediately shared this on Instagram! =)


No need for the recipe list since there's no measurement here.  All you need are the following:

SMOKED SALMON ON TOAST

Pack of good quality smoked salmon
Slices of toasted baguette (any bread variety you fancy, as long as it's crusty and crunchy when toasted)
Cream cheese (any brand you like)
Capers (for garnish and added tang and flavor; optional 'coz others don't like this)
Lemon wedge

Toast your bread, spread cream cheese, lay down a slice of salmon, and top with capers.
Arrange and serve on a platter with lemon wedges.

Squeeze some lemon juice over the salmon and devour!  I paired my hors d'oeuvre (this was my dinner so I ate 6) with my favorite Beringer White Zinfandel.  Perfection!

Hope you try this easy-peasy fancy appetizer... not just during the holidays.  Instead of capers, why not garnish with caviar instead?

Lenten Special: Favorite Meatless Dishes

Friday is my weekly blog day, but in observance of Good Friday, I will skip a post for tomorrow as my form of sacrifice.  As I mentioned on my Facebook status update yesterday, I cannot do fasting because I will definitely faint from hunger. =) 

In lieu of my Friday post, I've compiled some of my favorite meatless recipes that you can try this week.  Skip this and bookmark if you are fasting, heehee... try them on ordinary days.  You know I am all for quick and simple dishes, so nothing complicated here.

Foodie Friday: Creamy Salmon & Caviar Pasta

I enjoy eating salmon occasionally. But I am a caviar virgin...until this dish came along.


For the longest time, I was so curious how caviar tastes like, and why the rich and famous love this unbelievably expensive fish roe so much!

I will not pretend to know much about this salty delicacy and appear snooty in the process. I Googled, and Wikipedia states, "traditionally the designation caviar is only used for sturgeon roe from the wild sturgeon species living in the Caspian Sea...".  Ergo, eggs of a large fish, heehee  =)


My curiosity led me to this post by Jenni Epperson which got me more excited to finally indulge and give in to my inner foodie. I learned that lumpfish roe is the more affordable caviar, in black or red variety.

I quickly planned for a pasta dish that will marry the diverse flavors of salmon, cheese and caviar. So off I went to find some nice salmon fillet, a block of parmesan cheese, and began my search for that easy-on-the-pocket caviar.  And as if it was meant to be, a new batch of Emborg Lumpfish Caviar were being stacked as I passed by the cooler section of the supermarket (Unimart)!  I grabbed this 100-gram jar with a price tag of P324.50 (about US$7 only).  Some may still think it's pricey for a tiny jar, but I soon discovered that a little goes a long way for caviar.


To be honest, I was really excited to prepare and serve this dish especially to J, knowing he prefers creamy white sauces over tomato-based pasta sauces. Surprisingly, this very satisfying meal was quite easy to prepare.  Let's now move on to the recipe:

Creamy Salmon and Caviar Pasta

Approx. 125 gms. Spaghetti
100 gms. Salmon fillet (plain)
Half a small white onion, chopped
1 tablespoon olive oil
2 tablespoon butter
1/2 cup all purpose cream
3 tablespoon grated parmesan cheese
Salt and pepper
1 teaspoon lumpfish caviar
parsley and capers, optional

To prepare:
Boil water for pasta.
Slice or cube salmon fillets, salt lightly and set aside.
Chop onion.
Chop parsley for garnish (optional)

To cook:
Cook pasta as instructed from the pack.
Heat olive oil in a pan, then add butter.
On medium heat, sweat chopped onions in the pan.
Add salmon then saute for around 3 minutes, until half-cooked
Pour in cream and simmer a couple minutes.
Mix in grated cheese in the cream sauce until melted.
Simmer for a few more minutes then turn off heat.
Check pasta if al dente, drain and set aside.

To serve:
Toss spaghetti in the creamy salmon sauce and plate.
Finally, top the dish with caviar.
Garnish with capers and parsley if you wish.

Serve immediately. Best with toasted garlic-rubbed baguette.
Good for 1 to 2 persons.

Add more cream and cheese for your desired consistency and taste.

Good to know:  Mother-of-pearl is the ideal serving dish for caviar. Never use metal spoons to scoop out caviar. If you don't have mother-of-pearl cocktail spoon, use plastic instead.

If you wish to use gravlax or smoked salmon, you may skip cooking the salmon with the cream and simply mix it into the sauce or top the plated dish with slivers of salmon and caviar.

My perfect bite -- the lethal combination of delicate black 'pearls', tender salmon chunks and al dente pasta noodles enveloped in velvety cream cheese sauce! Rich, rich, rich (in looks and in flavor!) :-)))

Truly a gastronomic delight!
Crazy for more caviar? How about some lumpfish caviar on toast as hors d'oeuvres, or even for breakfast?
