Foodie Friday: No-Bake OREO Cheesecake Singles

This is my last Foodie Friday post for the year, and what better way than to feature another dessert that you can serve at your holiday parties, or give as gifts.  It's safe to say that Oreo is the world's most popular sandwich cookie, the go-to snack that's well-loved by kids and adults with it's delicious simplicity and versatility as a sweet treat. Inspired by my most popular blog post - the No-bake Blueberry Cheesecake, and other Oreo cheesecakes I've seen in the market, I made a spin on this classic recipe and came up with two versions, this time with Oreo cookies.


Even kids can do this, with just a few ingredients and easy steps to follow.  The boy and the girl actually took turns and had fun mixing the cream cheese, crushing the Oreos, and assembling the cups.

Here's how to make mini no-bake Oreo cheesecakes that you can easily serve and give away. No slicing, no mess, no pans, and best of all, no baking required. Let's begin!


NO-BAKE OREO CHEESECAKE SINGLES

What you need:
10 OREO cookies - choose you own flavors (I used Original, chocolate, and Action Berry)
10 Small plastic cups/containers with lid or lined paper cups (same cups or liners used for cupcakes)
Cheesecake filling (same cheesecake recipe here, with photos)

Cheesecake filling:
1 cup cream cheese (1 brick / approx. 225-250g, any brand you like) - leave at room temp.
1 cup all purpose cream - chilled (approx. 250g, leave in ref a few hours or overnight)
1/2 cup sugar
3 tablespoons liquid milk (any fresh milk or evaporated milk)
1 tablespoon unflavored gelatin (1 sachet of Knox or Ferna Unflavored Gelatine)
6-8 Oreo cookies - coarsely crushed


To prepare cups:
Lay out paper cups or plastic containers - single size
Put 1 cookie each, centered at the bottom of the cup
Set aside

To prepare filling:
Using an electric mixer, whip the chilled cream in a bowl, add 2 tablespoons of sugar and beat until stiff. Set aside.
In a separate bowl, gradually mix remaining sugar into softened cream cheese. Beat until smooth and set aside.
In a small sauce pan, combine milk and gelatine powder. Heat on low until completely dissolved (don't boil, use a wire whisk while heating to remove lumps). Remove from heat and immediately pour into cream cheese mixture and beat until well blended.
Pour cream cheese mixture into the whipped cream and beat on medium to high.



To assemble:
Line up all the single containers/molds and have the cheesecake filling and crushed Oreos in place.

Set 1
Scoop 2 heaping tablespoons of cheesecake filling into 5 cups. Lift and drop each cup lightly to tap and set evenly, and to release some air bubbles.
Use half of the crushed Oreos as topping on each of the 5 cups.


Set 2
Mix the rest of the crushed Oreos into the remaining cheesecake filling. Do not over mix.
Scoop 2 heaping tablespoons of the filling into last 5 cups. Lift and drop each cup lightly to tap and set evenly, and to release some air bubbles.
Option to add more crushed Oreos as topping.


Place all your prepared Oreo cheesecake cups on a tray and cover with a plastic wrap. If you will use containers, then cover with the individual lids.

Chill in the refrigerator at least 4 hours before serving.

Take a peek at the bottom of the cup and you'll see your whole Oreo cookie "crust". Feel free to add different kinds of toppings on your single cups. My girl added a whole piece of Oreo and three M&Ms with peanuts. 

I used Oreo Action Berry flavor with the yellow filling, to add color and zing in the flavor. Spoon out and see delicious layers of Oreos and cheesecake! Luscious and smooth cheesecake with a wonderful contrast in texture and flavor of the Oreo. Smooth and crunchy in one scoop!


Decorate your single cups with holiday-themed washi (printed tapes), or any type of trimmings you like. You can even place each cup in a single cupcake box, add ribbons and a disposable spoon. Get creative, and let the kids have fun with decorating the cups before serving or giving out friends.
