Foodie Friday: Linguine with Chicken and Mushroom

I am a big pasta eater, and so is my son.  So, it was but natural for me to include one pasta dish during our recently concluded Hunt's Mother-Child Cook-Off held during the Yummy Eats food fair last week.  And for today's Foodie Friday, I'm sharing the recipe of the pasta dish we have prepared during the cooking challenge.

Remember my earlier post about Mom-Friday's participation at the cook-off?
Well, we were tasked to prepare 3 dishes in 1 hour and should make use of Hunt's sauces.  Among the three that I cooked, this pasta recipe is the only one I'm confident about.  Thankfully, I landed 2nd place. I still wonder what the judges thought of my dishes, particularly this one.... =)


Linguine with Chicken-Mushroom, Beef & Beans, Omelettes a'la Amatriciana

LINGUINE WITH CHICKEN AND MUSHROOM

1 tablespoon butter
1 tablespoon cooking oil
1 onion, diced
1 clove garlic, minced
3 strips of bacon, chopped (optional)
3-4 chicken breast fillet, chopped
1/2 cup button mushrooms, sliced
1 tablespoon tomato paste
500g Hunt's Spaghetti Sauce Pinoy Party Style (regular or Parmesan Cheese will taste as good)
1/4 cup all purpose cream
grated parmesan cheese
ground pepper and salt
250-300g cooked linguine (Spaghetti or Penne would work well too)

To prepare:
Bring water to a boil and cook pasta, al dente.
Chop all veggies and meats

To cook:
Heat a pan and saute onion, garlic bacon in melted butter and oil. Stir until bacon is browned.
Add the chicken and cook over medium heat until tender.
Mix in the mushrooms and cook for another 2 minutes.
Add tomato paste and mix well.  Pour pasta sauce and simmer for a few more minutes.
Stir in the cream into the tomato sauce one tablespoon at a time, mixing slowly to see creaminess. Adjust to your taste. (You can use less, or more, cream if you wish.)
Add about a tablespoon of parmesan cheese, stir until well blended.
Add salt if needed.

To serve:
Toss sauce over cooked linguine and serve with more parmesan cheese. 



What I like about this recipe is the tomato-cream sauce.  It's not your usual pasta sauce that is either red or white -- tomato-based, or cream-based.  For me, this is a happy marriage of both sauces and I'm pretty sure, many of you would enjoy this simple and hearty pasta dish!
