Foodie Friday: Cream Corn & Chicken Comfort Soup

It was drizzling the other day and finally got inspired to feature this family favorite.

I realized I have been holding on to several picture files and recipes for too long. Like this one, I have a line-up of dishes waiting to star in their own Friday post. Today is for this simple, traditional hearty soup which will make another appearance on the dinner table tomorrow. It's been a crazy week so our meals were, as usual, express dishes.

I made this one (pictured above) months ago and I missed it. This comfort soup is a bestseller especially with the kiddos. It's always 'bottoms up' for them at the end of our meal.  What I love about this soup is how the flavor of tender chicken bits and sweet corn perfectly complements in every slurp. A perfect starter for any meal.

Anyone can do this in minutes. Easy peasy. 

Cream Corn & Chicken Soup

2 pieces chicken (any part you prefer, fillets can do too)
1/2 can of cream corn
1 liter chicken stock (or water boiled with 1/2 chicken bullion)
1/2 white onion, chopped
1 egg
1 tablespoon cornstarch diluted in 1/4 cup water
salt and pepper
sesame oil
spring onion
hard boiled quail eggs (optional)

To prepare:
Boil water in a small pot and add around 1/4 teaspoon salt when it reaches a rolling boil.
While boiling, chop onions. Whisk the egg. Set them aside.
Drop chicken pieces in the boiling water and leave until cooked through, around 20 minutes.
Once chicken is cooked, turn off heat. Do not throw away the broth.
Chop chicken in bits, the size of a corn kernel.

To cook:
Add chicken bullion, if desired, to broth and turn on the heat.
Pour cream corn, chicken bits, and onions to the pot. Allow to simmer for a few minutes.
Prepare cornstarch water and mix in soup to thicken.
Mix in the egg and use a fork to whisk lightly. Turn off heat.

Add a few drops of sesame oil and garnish with chopped spring onions.
Stir and serve immediately.
Serves 4 to 6.

Season with more salt and pepper as needed.
Drop some hard boiled quail eggs for a chunky, hearty soup.
