I love seafood. Aside from crabs and shrimps, scallops and oysters are in the top of my favorite food list. It's not easy to find fresh oysters when I buy my produce and groceries so I indulge from time to time when we dine at restaurants serving them. Medyo mahal lang. I still remember the baked oysters in 5 ways that we always order from Via Mare fine dining when I was still working in Tektite Towers. I dated myself again... I know, that was eons ago! But those were memorable times, and dining there were saved for special occasions or when treating an advertiser-client. I haven't had bake oysters in a long time. These days, I'd be lucky if I find fresh oysters in the market. Usually, I find freshly packed shucked oysters at SM Pasig Hypermarket and buy a pack to cook at home.

Foodie Friday: 8 Meatless Recipes for Lent
First Friday of the month: Mom-Cook / Recipes
It was Ash Wednesday the other day, the first day of Lent. I attended the mass held at the girl's school and was reminded of the meaning of this holy season. The priest said that Lent is about alms giving, prayer, and sacrifice. Two forms of sacrifice that Christians practice are abstinence and fasting. It doesn't have to be just about food. We can all choose to abstain or fast from wanting and doing things that we like, or giving up something for someone in need. For this post, it's about abstaining from eating meat.

Honestly, it's hard for me to give up meat, or a meal, more so to fast. But I'm willing and able to abstain for eating meat every Friday. If you can abstain for 40 days, why not?
I have here 8 recipes from the past year, prepared with no meat, just to give you some ideas on what to include in your menus this Lenten season. Of course, you can cook these anytime of the year. Maybe some of you have already seen or read these food posts, or maybe tried them already. Thank you for that!

DIY Hot Pot Meal (meat can be omitted from this recipe)
You know I want things simple and easy. No complicated dishes here, so I hope you can try them, if you haven't yet.

Oysters Teriyaki with Cookplus Ceramica
A quick post for today...
I have quite a few features lined up for the coming weeks and I just have to put this in before I totally forget - I promised to share this dish sometime back. Of course, my spanking new Ceramica pan inspired me to do this super quick and delectable seafood dish one dinner time.
After attending the Lock and Lock event last month, I finally got to tick off an item from my kitchen wish-list -- this CookPlus Ceramica frying pan in mustard yellow! =) And they're 20% OFF!
These were my actual Instagram shots I took as soon as I got home, and the oyster dish above, just minutes after cooking. I'll tell you more about my lovely Ceramica pan in another post, plus the Korean dish that I also cooked with it but did not make it to my last Foodie Friday post.
I'd love to know your thoughts on this post. If you enjoyed this, feel free to share it!

Fresh oysters from the supermarket + new ceramic pan = Inspired cooking!
Here's something for those of you who love these succulent mollusks. I got these fresh shucked oysters from SM Hypermarket in Pasig for PhP 170 per pack (sorry, I failed to notice how many grams per pack).
OYSTERS TERIYAKI
300 - 500 grams fresh oysters, rinsed and drained
Ginger, minced
Garlic, minced
Red onion, chopped
Bell pepper, chopped
ground black pepper
Kikkoman Teriyaki sauce
Kikkoman Teriyaki Baste & Glaze
oil
To cook:
Heat your non-stick pan, on medium, add a bit of oil
Saute the ginger, garlic, onion, and bell pepper
Let it sweat and put in the oysters
Toss quickly for a minute, then pour about 3 tablespoons prepared Teriyaki Sauce
Adjust amount to your liking; add a dash of ground pepper
Simmer for another minute, or until oysters are round and firm
(Do not overcook as they will shrink)
(Do not overcook as they will shrink)
Remove from heat and plate. Drizzle with Teriyaki Glaze.
Mix and serve immediately.
As I always say, I rarely measure when I cook, so I just eyeball the amount of the spices and sauces. Adjust seasoning to your taste. The Teriyaki sauce is salty and has a bit of tang, while the Teriyaki Glaze is salty-sweet. I like that contrast for this juicy sauteed oysters. 10 minutes is all you need.
This Japanese-inspired dish will make a great appetizer or as main viand, served with steamed rice!
*Sorry for the grainy photos, first time to use the iPhone for the food shots here
