We all love pasta dishes. Spaghetti bolognese is a staple dish and I prepare it with or without an occasion coz it's safe to serve in minutes and everybody eats it. There are so many variations to the bolognese sauce and the Filipino style is on the sweet side. Personally, mas gusto ko yung Italian style in chunky tomato-herb sauce and without the sweet flavor. J prefers the sweet-style kaya minsan compromise with the sauce.

Healthy cooking will always be the goal of any homemaker and cooking mama. It's a bonus if the dishes are quick and easy to prepare. To achieve that goal, it's a must to have the best and freshest ingredients you can find. In my pantry, staples include premium sauces and oils which are the usual base for most of my cooking. And for today's recipe, only fine aromatic olive oils can enhance the flavor of this very simple pasta dish.

Foodie Friday: Cheesy Spaghetti alla Carbonara

We are all pasta lovers here at home. I eat any types of pasta, but the kids have their favorites. My boy and I prefer tomato-based sauces, while the hubby and the girl go for creamy ones. The spaghetti carbonara is not something I cook as often as the classic spaghetti bolognese because of my personal preference to red sauce. Cabonara requires good quality cheese to make a really good sauce. Remember I got boxes of cheese a few weeks back? Well, the grated parmesan was put to good use to make this creamy sauce.

You know I'm all for quick and easy dishes, and this is no exception. I simply added smokey King Sue sausages to my spaghetti bolognese for that added savory twist to our usual meat sauce. I made this spaghetti dish months ago even before I got these goodies from King Sue. I like their sausages, but forgot if I used Italian or English Sausage for this recipe. Sorry, I honestly can't remember - use either, both will taste good with this sauce. =)

ENGLISH SAUSAGE PASTA
2 tablespoons olive oil
4 cloves garlic, minced
1 small white onion, chopped
200g ground beef
5-6 sausages (Italian or English) - diced
1 Sweet Style spaghetti sauce
1 Italian Style spaghetti sauce
cooked spaghetti noodles
To prepare:
Cook spaghetti as instructed (about 300g)
Mince garlic and chop onion.
Dice sausages.
To cook:
While pasta is cooking, heat a pan and sauté garlic and onion in oil.
Add ground beef and cook for about 3 minutes, then add sausages. Continue to sauté until sausages are browned and cooked through.
Pour spaghetti sauce and simmer.
To serve:
Pour meat and sausage sauce over cooked spaghetti and sprinkle with parmesan cheese.
Serve immediately.
I never really liked hot dogs in my spaghetti, so this is my version with more flavorful premium sausages for a meaty, chunky sauce - a meat-lovers' delight! =) Try this!

I love seafoods - fish, crustaceans, shellfish. When I get the chance to buy some fresh seafood, I get inspired to try old recipes from my mother or whip up something new. Spaghetti alle Vongole (Italian for spaghetti with clams) is one of my favorite pasta dishes that I order when it's on a menu. For the longest time, I have been thinking about making this at home but always end up with clam soup. Finally, I was able to cook my first Spaghetti alle Vongole and it was delicious, if I may say so myself! =)
I kept two recipes for reference when I get the chance to cook it at home. When I saw a fresh batch of clams in SM Hypermarket, I took home a kilo and planned for my first spaghetti vongole for dinner. When buying clams, make sure they are opening and squirting water.
This is a pretty quick and easy dish to make. I adapted my recipe from these two sources:
Jamie Oliver - Spaghetti VongoleYummy.ph - Pasta-Vongole
SPAGHETTI VONGOLE a'la MOM-FRIDAY
4 cloves garlic, minced
1 small white onion, chopped
1 medium ripe tomato, seeded and chopped
3 tablespoon extra virgin olive oil
2 tablespoons butter
3-4 tablespoon Chinese cooking wine
(only because I don't have white wine)
*1/4 cup white wine
1 kilo clams
(cleaned of dirt and sand)
sea salt
ground pepper
chili flakes
(optional)
300-400g spaghetti noodles - cooked al dente
To prepare:
Soak clams in water with a teaspoon of salt, about 30 minutes.
Allow clams to "gargle and spit", and then rinse to wash throughly to make sure no dirt or sand in your clams.
While soaking your clams, boil water to cook your spaghetti (al dente) as instructed.
Chop garlic, onion and tomato.
Set aside cleaned clams, and cooked spaghetti.
To cook:
Heat saucepan, sauté garlic, onion, tomato in EVOO, then add butter. Cook until soft and fragrant.
Add Chinese cooking wine and stir a few more minutes to reduce the sauce.
Add clams and shuffle the pan in medium heat. Cover the pan for about 3 minutes - allow clam shells to open.
Continue to stir and shuffle until all clams open.
Season with salt and pepper (and chili flakes).
Discard clams that still did not open by this time.
Toss cooked spaghetti and mix until well coated.
Let pasta soak for a minute to absorb the flavors.
Top with grated parmesan cheese if desired.
Serve immediately. Good for 3-4 people.
I can't believe it was this easy to cook! I hope there will be fresh clams again on my next trip to the supermarket. The rest of the ingredients are always present in my kitchen. To be honest, I was intimidated by the white wine, heehee. Since I did not have one at home, I've decided to just use my Chinese cooking wine as alternative and I'm really happy my spaghetti vongole still turned out really good, and J enjoyed it too!

Foodie Friday: Instant Kung Pao Chicken Pasta

Care for some spicy spaghetti? Go Kung Pao!!!
I'm not going to pretend this is something new. Kung Pao (which translates to palace guardian/official) is a famous spicy Asian sauce and is definitely one my favorite pasta sauces ever since I had a taste of California Pizza Kitchen's Kung Pao Spaghetti, with shrimps, more than 10 years ago. Then came the equally delicious Charlie Chan Pasta from Yellow Cab, a popular local pizza chain.
What I love about kung pao sauce is it's very distinct Szechuan-style sweet-hot-salty flavor with red chilies, complemented with roasted peanuts and colorful mix of veggies for my pasta.
And now I discovered this ready-to-use pasta sauce at one of my weekly trips to the supermarket -- Clara Olé! Simply toss with your favorite pasta noodles, meat, shrimps or tofu and you're ready to go!
INSTANT KUNG PAO CHICKEN PASTA
Cooked spaghetti noodles (good for 2 - 3 servings)
Sauce:
3 pcs. chicken thigh fillet (or breast fillet), cubed and lightly salted
2 cloves garlic, minced
1/2 red bell pepper, finely chopped (approx. 1 tablespoon)
1 stalk medium celery, chopped
2 tablespoons whole roasted peanuts
Few stems of spring onion, chopped to matchstick size
3 tablespoons peanut oil / canola oil
1 pack Clara Ole Kung Pao Pasta Sauce
black pepper
chili flakes, optional
chili oil, optional
To cook:
Cook spaghetti as instructed on the pack.
Heat a pan with the oil, then saute and lightly toast minced garlic.
Add in chicken cubes and stir-fry for around 15 minutes until browned.
Mix in the bell pepper, celery, spring onions, and peanuts. Continue to stir-fry until chicken is done.
Pour in the kung pao sauce and mix well. Add ground pepper.
Taste and add chili flakes and chili oil if you prefer more heat.
Gradually toss in cooked spaghetti until well coated.
Serve and garnish with more spring onions and peanuts if desired.
I ate this for two straight days! :)))
What I like about this instant kung pao sauce is it's rich, balanced flavor, yet it's not too hot, which was just perfect for me. This way, you can easily control the heat to your liking by adding more chilies or chili oil. You can actually see bits of chillies and taste a subtle nutty taste to the sauce.
Next time, instead of chicken, I'll use juicy, succulent shrimps!

As I write this food post, I'm already thinking of what variation I can do with this very simple yet flavorful pasta dish in garlic oil, which took me less than 30 minutes from prep to plating.
Thankfully, it turned out much better the second time around, so I can now share this with you. Still no exact measurements though. But I can guarantee, for those of you who like anchovies, garlic and olive oil in your pasta, this is worth a try! It's spaghetti with a Pinoy twist using bottled gourmet tuyo.
SPICY TUYO SPAGHETTI
Cooked spaghetti
Approx. 4 - 5 tablespoons olive oil
4 cloves of garlic
3 - 4 fillets of bottled spicy tuyo (dried salted fish) in oil
2 fillets of anchovies
black pepper
fresh basil leaves
grated parmesan or edam (queso de bola) cheese
capers
To prepare:
Heat oil in a saute pan
Mince garlic
Chiffonade basil leaves, around 6 - 10
To cook:
Sautee minced garlic in olive oil.
Add tuyo fillets and anchovies, sautee until crumbled. Pour a little of the oil from the bottled tuyo.
Gradually toss cooked spaghetti in the pan until well coated.
Add more tuyo and anchovies if you want it more salty.
Put in basil, some grated cheese and fresh cracked pepper.
Mix well.
Plate and sprinkle with bits of capers, more grated cheese, and chili flakes for more heat.
Serve immediately.
Good for 1 - 2 persons.
The addition of anchovies, basil and capers complemented very well and made this meal more exciting and extra savory. The pungent fragrance of toasted garlic in olive oil, blended with the unique taste and aroma of the bottled salted fish slivers created a dish that's truly appetizing!

I rarely measure ingredients when I cook, so you could say it's always a hit or miss for me in the kitchen -- well, if you ask hubby, his answer would probably be all misses! :))) I made this pasta dish twice and it was bland the first time. I took photos just in case but you now know it wasn't published 'til today.
Thankfully, it turned out much better the second time around, so I can now share this with you. Still no exact measurements though. Foodie Friday: Creamy Salmon & Caviar Pasta

I enjoy eating salmon occasionally. But I am a caviar virgin...until this dish came along.
For the longest time, I was so curious how caviar tastes like, and why the rich and famous love this unbelievably expensive fish roe so much!
I will not pretend to know much about this salty delicacy and appear snooty in the process. I Googled, and Wikipedia states, "traditionally the designation caviar is only used for sturgeon roe from the wild sturgeon species living in the Caspian Sea...". Ergo, eggs of a large fish, heehee =)
My curiosity led me to this post by Jenni Epperson which got me more excited to finally indulge and give in to my inner foodie. I learned that lumpfish roe is the more affordable caviar, in black or red variety.
I quickly planned for a pasta dish that will marry the diverse flavors of salmon, cheese and caviar. So off I went to find some nice salmon fillet, a block of parmesan cheese, and began my search for that easy-on-the-pocket caviar. And as if it was meant to be, a new batch of Emborg Lumpfish Caviar were being stacked as I passed by the cooler section of the supermarket (Unimart)! I grabbed this 100-gram jar with a price tag of P324.50 (about US$7 only). Some may still think it's pricey for a tiny jar, but I soon discovered that a little goes a long way for caviar.
To be honest, I was really excited to prepare and serve this dish especially to J, knowing he prefers creamy white sauces over tomato-based pasta sauces. Surprisingly, this very satisfying meal was quite easy to prepare. Let's now move on to the recipe:
Creamy Salmon and Caviar Pasta
Approx. 125 gms. Spaghetti
100 gms. Salmon fillet (plain)
Half a small white onion, chopped
1 tablespoon olive oil
2 tablespoon butter
1/2 cup all purpose cream
3 tablespoon grated parmesan cheese
Salt and pepper
1 teaspoon lumpfish caviar
parsley and capers, optional
To prepare:
Boil water for pasta.
Slice or cube salmon fillets, salt lightly and set aside.
Chop onion.
Chop parsley for garnish (optional)
To cook:
Cook pasta as instructed from the pack.
Heat olive oil in a pan, then add butter.
On medium heat, sweat chopped onions in the pan.
Add salmon then saute for around 3 minutes, until half-cooked
Pour in cream and simmer a couple minutes.
Mix in grated cheese in the cream sauce until melted.
Simmer for a few more minutes then turn off heat.
Check pasta if al dente, drain and set aside.
To serve:
Toss spaghetti in the creamy salmon sauce and plate.
Finally, top the dish with caviar.
Garnish with capers and parsley if you wish.

I enjoy eating salmon occasionally. But I am a caviar virgin...until this dish came along.
For the longest time, I was so curious how caviar tastes like, and why the rich and famous love this unbelievably expensive fish roe so much!
I will not pretend to know much about this salty delicacy and appear snooty in the process. I Googled, and Wikipedia states, "traditionally the designation caviar is only used for sturgeon roe from the wild sturgeon species living in the Caspian Sea...". Ergo, eggs of a large fish, heehee =)
My curiosity led me to this post by Jenni Epperson which got me more excited to finally indulge and give in to my inner foodie. I learned that lumpfish roe is the more affordable caviar, in black or red variety.
I quickly planned for a pasta dish that will marry the diverse flavors of salmon, cheese and caviar. So off I went to find some nice salmon fillet, a block of parmesan cheese, and began my search for that easy-on-the-pocket caviar. And as if it was meant to be, a new batch of Emborg Lumpfish Caviar were being stacked as I passed by the cooler section of the supermarket (Unimart)! I grabbed this 100-gram jar with a price tag of P324.50 (about US$7 only). Some may still think it's pricey for a tiny jar, but I soon discovered that a little goes a long way for caviar.
To be honest, I was really excited to prepare and serve this dish especially to J, knowing he prefers creamy white sauces over tomato-based pasta sauces. Surprisingly, this very satisfying meal was quite easy to prepare. Let's now move on to the recipe:
Creamy Salmon and Caviar Pasta
Approx. 125 gms. Spaghetti
100 gms. Salmon fillet (plain)
Half a small white onion, chopped
1 tablespoon olive oil
2 tablespoon butter
1/2 cup all purpose cream
3 tablespoon grated parmesan cheese
Salt and pepper
1 teaspoon lumpfish caviar
parsley and capers, optional
To prepare:
Boil water for pasta.
Slice or cube salmon fillets, salt lightly and set aside.
Chop onion.
Chop parsley for garnish (optional)
To cook:
Cook pasta as instructed from the pack.
Heat olive oil in a pan, then add butter.
On medium heat, sweat chopped onions in the pan.
Add salmon then saute for around 3 minutes, until half-cooked
Pour in cream and simmer a couple minutes.
Mix in grated cheese in the cream sauce until melted.
Simmer for a few more minutes then turn off heat.
Check pasta if al dente, drain and set aside.
To serve:
Toss spaghetti in the creamy salmon sauce and plate.
Finally, top the dish with caviar.
Garnish with capers and parsley if you wish.
