Roti Paratha, Yum!

This is a food find I've been holding off for months now.  I almost forgot about it until yesterday, while planning for our dinner.  I saw two packs sitting in the freezer (which I bought a few weeks ago) and got inspired so I thought I'd finally share this with you today.

Ever since I tried Spring Home's Roti Paratha late last year, purchased from Unimart (supermarket in Greenhills shopping center), I've been craving for it from time to time. Since it is not commonly served in our favorite Asian restos, I consider this a treat. And to my surprise, even my picky-eater of a son loved it too!

Among Asian breads, roti and naan breads are two I've tasted and really enjoyed eating.  Though I can't recall when and where I first had them, I've learned there are many variations to these Indian flatbreads, specifically roti, which is made from unleavened whole wheat.  It is usually cooked on a cast iron griddle and puffed up over a flame.  It is also popularly know as roti canai in Malaysia and Singapore. Paratha is a flaky version traditionally mixed with ghee (clarified butter), and is fried flat to a crisp.

Honestly, I became more confused with the names since this pack says ROTI PARATHA, and technically, these are two slightly different flatbreads. I'd be happy if anyone can enlighten me about these breads. For this post, let's just call it roti, plain and simple.

This frozen roti comes in Plain, Wholemeal, and Onion variants. I only had the chance to buy this Onion flavor and it's simply delicious!  I lost the receipt but as I recall, a pack costs a little below P100 (roughly $2), with 5 pancakes per pack that are ready to cook straight from the freezer, anytime of the day.


To cook:
Take out frozen roti disc (do not thaw), remove plastic sheets, and fry directly on a hot non-stick pan. No oil needed since the roti already contains vegetable margarine. The manufacturer replaced the ghee with margarine so it is cholesterol-free. Fry for a few minutes on each side until light brown. It may puff up while cooking, but will deflate once it's off the heat. Serve immediately.

Imagine a crunchy, flaky crust...soft and chewy inside, all the same time. And fragrant too! Munch, munch...yum-yum!

I'll get the the Plain or Wholemeal variants next time, and will add butter for more flavor and sprinkle with sugar before serving. Great for breakfast or snack. I once made chicken curry and it's a perfect match to our onion roti.

I have not seen any other brand, aside from Spring Home, that sells 'instant' roti, and I've only been able to buy this at Unimart, Savemore and SM supermarket. They are not always in stock.

If you love roti and similar flatbreads, you can now have this at home anytime, and I guarantee you will like this too!

If you were following my blog for sometime now, you may have noticed the 'renovation' and improvements I have made over the last several weeks, which included a fixed category for all 4 Fridays of the month just to keep things organized in here. But some months have 5 Fridays -- like this month of April. I made an exclusive post about it which I linked below. I'm re-posting a portion for you:

I will take this opportunity to post anything that strikes my fancy at that moment, or some inspiring images that reflect my interests in fashion, design and photography.  Less words, more pictures. Consider this a pleasant break from the usual write-ups.

Clark Field Educational Tour: Zoocobia & Paradise Ranch

I consider being a full-time mom to be a privilege. And one of the perks is that I am able to participate and be involved, whenever I choose to, in my children's school activities.

Aside from the kids' special programs and school events, what I really look forward to are their exposure trips.  No doubt, such trips are great learning experience for the children and bonding opportunity with their parents (if they're allowed to join), aside from building stronger friendships and camaraderie among the students.

Clark Field Educational Tour: Air Force City & Nayong Pilipino

Early this year, the kids and I had the wonderful opportunity to be a part of this educational trip to the former U.S. air base -- Clark Field, in Angeles City, Pampanga. This all-day excursion was organized by my son's school, DML Montessori, for all the Kinder and Prep students, joined by their parents. Some nannies, grannies, and siblings were also part of our large entourage.

Fresh Fruit Shakes for Summer...or any day

I just realized I hoarded an assortment of fresh fruits since last week -- succulent mangoes, avocados, juicy red strawberries, crunchy apples and pears, sweet papaya slices, bananas, melon, ripe seedless oranges and grapes, take your pick!


With most of the fruits now stocked-up in the fridge, we are forced to eat at least a serving or two each day, which is really good!

I learned that the best time to eat fruits is on an empty stomach. And one of the many health benefits from doing this is that it would allow the body to better absorb all its nutrients and instantly energize you. So kick-start your day with a serving of fresh fruit as part of your breakfast. I'm making a conscious effort to do this. The kids eat lakatan bananas every morning, so this favorite potassium-packed fruit is a staple.


For today's post, I was simply inspired by this bounty and decided to make fresh fruit shakes out of this colorful bunch!  As part of breakfast, lunch, dinner, dessert, or anytime in between, these wonderful fruits in season are best eaten raw, or as cool blended drinks perfect during the sweltering days of summer.

We had avocado and mango shakes last week, and more recently, I have made these scrumptious Strawberry-Banana Smoothie, a personal favorite, and Melon Milkshake.



Ever since I first tasted this smoothie some 11 years ago at Planet Hollywood (Singapore), the Strawberry-Banana Smoothie (a.k.a. Home Alone Smoothie) is always top-of-mind whenever I am able to buy fresh strawberries. So after bringing home a batch, I wash them thoroughly first, trim the tops, then freeze them all. You can use fresh, but for me, frozen strawberries make for a better smoothie!

Strawberry-Banana Smoothie

1 cup frozen strawberries
1 medium banana, chopped
1 cup ice, shaved or cubes
1/2 cup cold water
2 tablespoons sugar, or syrup
Splash of grenadine (pomegranate syrup), optional

Throw them all in a blender and mix!
Adjust fruits and sugar to your taste.

Makes a full 500ml serving.


Relax and sip, sip sip! Ahh...yum...only thing missing here was a beach backdrop.
I paid extra for the smoothie promo to avail of this cocktail glass as a souvenir.  It's where my 'Home Alone' smoothie was actually served. They only had 'Jakarta' edition though.

I recommend you gradually add the last half of the water to reach your perfect slush.


Light and frothy, this next milkshake got a better reception from the kids. But you have to drink up as soon as it's served since the watery base quickly separates from the foamy flesh after a few minutes. Still good though.

Melon Milkshake

350gms melon (approximately 1/4 of a melon)
1 cup ice, shaved or cubes
1/3 cup cold water
1/8 cup liquid cold milk
2 tablespoons sugar, or syrup

Makes approx. 750ml serving.

Adjust water and milk proportion to your liking. I prefer mine to be less creamy. Again, gradually add the liquids for a thicker, or thinner, milkshake.


The little master and miss of the house also loved the juicy popsicles we made from the left-overs. These coolers are your perfect companions at home on a hot summer day. So bring out the blender, make some ice, and concoct your own refreshing fruit shakes and smoothies now!

Though we did not make any special plans the whole week, we already had our fun last weekend and I think I still have a slight hangover from that Acuatico family-bonding trip! I'm hoping we can have another out-of-town adventure before the kids go back to school in June.

My children are not fully aware of the significance of Easter yet. Even if they know about Jesus dying on the cross, it is still more an 'eggs and bunny rabbits' day today -- as Easter Eggs and Easter Bunny symbolize new life and rebirth.

Pasta Gambasetti a'la Mom-Friday

It's Good Friday today.  I did not even notice that the 40-day Lent has ended as I still clearly remember my salad post last Ash Wednesday. And it will be Easter in two days!


As much I would like to fast this Holy Week, I can't. Those who know me would agree it's not physically possible for me as I would collapse by mid-morning without eating anything, for sure! Abstinence, that I can do. So no meat for me today.  For people who can't afford to fast like me, how would you like to try my version of the Gambasetti?  Basically, it's the popular Spanish tapa (appetizer) of spicy garlic and shrimps in oil (gambas al ajillo) then mixed with spaghetti.


I love anything with shrimps and garlic. Gambas is one of my favorite starters to order when dining out. Now I wondered why I did not try to do this dish much earlier. Can't recall when, but the first time I made this, it was an instant hit with my hubby, though I used fusilli (spiral pasta) then. Another variation which I plan to try soon is to add some chorizo (Spanish sausage).

Let me remind you, I don't measure when I cook so these are just an approximation. Adjust the seasoning as you cook to suit your taste. If you don't like the seasonings, you can omit them altogether and just add some salt and chili in the oil.


Pasta Gambasetti a'la Mom-Friday

150g - 200g spaghetti (angel hair or fusilli will be good too)
200g white shrimps, peeled
2 tablespoons minced garlic (and maybe more!)
1/4 cup olive oil
1 tablespoon butter (optional)
1 teaspoon fresh lemon juice
1 teaspoon liquid seasoning
1/2 teaspoon Worcestershire sauce
1/4 teaspoon ground Spanish paprika
1 tablespoon grated parmesan cheese
1 tablespoon chopped parsley
ground Cayenne pepper or chili flakes
ground black pepper

To prepare:
Peel shrimps and mince garlic. Set aside.
In a large pot, put enough water and bring to a rolling boil.
Add 1 teaspoon salt in the water, then slide in the spaghetti.
Cook pasta as instructed on the pack (usually 8 to 10 minutes) or until al dente.
Drain and set aside.


To cook garlic oil / sauce:
(While pasta is cooking)
In a pan, heat olive oil. Add butter until it liquifies, but not browned.
Sautée garlic until fragrant and lightly toasted, then add in shrimps.
Flavor with the lemon juice, liquid seasoning and Worcestershire sauce (or plain salt)
Sprinkle paprika, pepper, parmesan cheese and chopped parsley.
Add a pinch of cayenne pepper -- this is very hot so I use it sparingly. Omit if you don't like it spicy.
Continue to sautée for another minute for the flavors to set in. Avoid overcooking as the shrimps will become tough.
In the same pan, toss in the spaghetti until well coated.

Depending on the resulting quantity of your garlic oil / sauce, add pasta gradually as you may not have enough sauce to coat all your cooked pasta.

Plate and serve immediately.
Sprinkle more cheese, salt, and chili flakes if desired.

Serves 2 (or 1 if you're really hungry!).

I place unused cooked pasta in an air-tight container and refrigerate. It keeps for up to 5 days.


This is one of my favorite pasta dishes so I hope you will like my simple version.

Whether you practice fasting or abstinence, may you have a meaningful Holy Week.
